Queen Esther's Ice Cream

One of the most fun Purim desserts is Bastani, or saffron ice cream. You start with a basic vanilla ice cream and mix in some Persian flavorings to your taste. I call it Queen Esther’s Ice Cream.


This recipe is adapted from "Food of Life" by Najmieh Batmanglij


  • 3 scoops vanilla ice cream (dairy or pareve)

  • Rose water

  • Saffron threads

  • Pistachio nuts 


Step 1

Scoop some vanilla ice cream into a bowl. 

Step 2

Add rose water, saffron threads, and pistachio nuts to taste.
